The funnest skills for me were conjuration and sneak. I'm planning to do this build: conjuration,sneak,light armor, smith, archery. Can I still stealth kill if I have summons running around and how good is this build? What is the best race for this build?

Answer: Breton is the best race imo due to the resistances and magic bonus. but really any race can be good at any build it just takes a bit more effort in getting them there. with the exception of high elves, worst race ever! lol
the build looks good. and i think if the game says your sneaking then you can get a stealth kill.
