I basically just want to wander around and stuff but I need a higher level so I don't die... and quests are boring.

Answer: Find caves to explore. Usually you'll come across low level bandits or something that you can kill and up you level. Try picking the locks of easy chests and stuff too. Bottom line: keep wandering and exploring and your levels will progress!
